honey cake with layers of mascarpone mousse (i also masked with it), pear chip, sauted pear, pumpkin rum sauce and caramel.
the cake is top with a caramel dipped pestachio nut. i made the caramel basket (holding sauted pears) with the end of a wooden spoon and a bare hand (gotta get it really thin or you burn yourself) |
