Well, the macarons are imported from France, so those are ready to go.
The slice takes about 1 hour to prep, including cutting (done the day or few days before and frozen). The choux for the profiteroles is also made in batches and frozen. For me to assemble a medium sized tray takes about 20-30 minutes
makes sense. if you plan right, and are used to doing this kinda thing, it makes total and complete sense to make as much as you can ahead and the freezer makes an awesome storage spot for most things.
